COMFORT FOOD

As I sit here sick and bored and feeling sorry for myself, I got an email from my dad saying that he had cocoa for breakfast. Well my little "feel good" light bulb went off and I knew I would feel better with some homemade hot cocoa. Here is what I did. I found a recipe for Mexican Hot Cocoa and altered it.

3 sq of unsweetened baking chocolate
1 t cinnamon
1/2 t powdered ginger
1/2 t all spice
1 can sweetened condensed milk
2 cans water

heat until the chocolate melts and the whisk until steaming. Do not boil.

Make a pot of coffee while the cocoa is heating. Fill each cup with half coffee and half cocoa. Add a little evap milk if you want and enjoy.

I have got to say...this is the best comfort food I have ever made.

Had to go feed horses. Now I will sip on the rest of my cocoa and cuddle up under the down comforter for the rest of the night. Thanks guys.

I LOVE Mexican Hot Chocolate. I have never made this recipe though, so I will have to give it a try!!
